Fish lovers take note: You may see cannabis-infused cold-smoked salmon in a legal dispensary near you soon.
Although more states are legalizing the use of cannabis, there is still stigma that surrounds marijuana – medical or not. This has led to a rise in the amount of edible cannabis products being produced. For those who prefer not to smoke cannabis (for whatever reason), consuming the medicinal properties of the cannabis is far less stigmatized.
The vast majority of cannabis edibles are snack products (i.e. cookies, brownies, candies, etc.), with most of those being sweet and/or covered in chocolate. Edibles made of chocolate or those that are extra sweet helps to cover the strong flavor of the cannabis. However, Nicholas Bruno of Rosenberg’s Bagels hopes to change this.
Bruno told the Huffington Post that he wants to “win a Cannabis Cup for something that’s not covered in chocolate.” And he has created a product that just may help.
It seems Bruno has created a cold-smoked salmon infused with cannabis. While this product is not an item on the Denver-based restraint menu yet, it should be available soon.
Bruno felt that there had to be a way to work the flavor of cannabis into savory products rather than covering it up with sugar. According to Bruno, “The dill, lemon, and cannabis, everything melds perfectly with the fish.”
Although the cannabis-infused salmon is not available yet, Bruno created this video to show you how to make your own:
Bruno used Everclear to help extract the THC from cannabis, burned off the alcohol and was left with cannabis oil. This oil was then used to cold-smoke the salmon.
He told the Huffington Post: “One day, we’d love to move forward with other fish, like trout, cod or anything we work with, and sell it at dispensaries.”
